100 g (4 oz) plain flour
pinch of salt
50 g (2 oz) butter or margarine
1 - 2 tablespoons water
100 g (4 oz) strawberry jam
method
1. Sift the flour and salt into a bowl. Rub in the butter or margarine until the mixture resembles fine breadcrumbs.
2. Stir in just enough water to bind the ingredients, and lightly mix together. Roll out the pastry on a lightly floured surface, then cut out (2 1/2 in) rounds.
3. Use these to line patty tins. Put a small spoonful of jam into each tart. Bake in a moderate oven for 10 - 15 minutes or until the pastry is golden. Cool on a wire rack. Serve warm or cold.
Use only enough water to bind pastry. Handle the dough lightly, as little as possible. Use a very light sifting of flour for rolling and roll one way only. Do not turn pastry over, lift on the rolling pin if necessary.

and to be quite honest they are particularly small.
i wouldn't recommend it.
If falling apart u havent added enough water. You can continue to add little dribbles of water if flour has dried it out after rolling
Nobody wants a jam tart that has pastry as thin as paper.
