4 mackerel, cleaned and heads removed
1 large onion, skinned and sliced
2 tomatoes, skinned and sliced
grated rind and juice of 1 lemon
salt and freshly ground pepper
1 bay leaf
15 ml (1 tbsp) chopped parsley
2.5 ml (1/2 tsp) ground mace
method
1. Put the fish into an ovenproof dish and cover with the onion and tomatoes. Add the remaining ingredients and cover the dish.
2. Bake in the oven at 190°C (375°F) mark 5 for 30 minutes. Uncover and cook for a further 10 minutes until the fish are tender.
