1. Beat together the flour, ale, egg, sugar, garlic salt and oil to make a batter, cover the bowl and leave the batter to stand for 15 minutes.
2. Wash, dry and trim the courgettes then, without peeling, cut them into 1/2 cm(1/4 in) slices. Transfer the courgettes to a plate, season them with salt and pepper, cover and leave for 5 minutes.
3. Work the parsley and cheese into the liver sausage. Wipe the courgettes and sandwich them together 2 at a time with the liver mixture.
4. Heat the butter a little at a time in a frying pan. Dip the courgette sandwiches in batter; drop immediately into the butter and fry them until golden brown on each side. Keep each batch warm as it is cooked.
Serve with: bread or fried potatoes.
