1. Peel the bananas and cut them into oblique slices. Stir the lemon and orange juice into the honey. Arrange the banana on individual plates and sprinkle with the honey sauce.
2. Wash the raisins repeatedly in hot water, drain and soak them in the rum. Grate the chocolate. Whip the cream until stiff and fold in the grated chocolate.
3. Sprinkle the rum-soaked raisins and the walnuts over the bananas and top each serving with a quarter of the cream. Serves 4
For a fresher tasting dessert, mix sliced orange in with the bananas and add up to 1 extra tablespoon of honey to the sauce, depending on the sweetness of the oranges.
