1. Brown the steak in a non-stick frying pan and place in a 1.75 litre/3 pint casserole. Add the onion, carrot, garlic and mushrooms.
2. Blend the light ale with the stock cube, vinegar, brown sugar, and nutmeg, salt and pepper to taste. Pour over the meat and vegetables. Add the bay leaf. Cover and cook in the oven for 1 1/2 hours, or until the meat is tender.
3. Mix the cornflour with the water and stir into the casserole. Cook for 15-20 minutes. Serve garnished with chopped parsley.
