1.5 kg (3 lb) chicken 1 onion, chopped
1 garlic clove, crushed
1/2 green pepper, seeded and chopped
2 tablespoons oil
25 g (1 oz) cornflour
600 ml (1 pint) chicken stock
salt and pepper
300 ml (1/2 pint) natural low-fat yogurt
for the garnish
chopped fresh chives or parsley
method
1. Cut the chicken into portions. Heat the oil in a flameproof casserole or saucepan. Add the chicken pieces, onion, green pepper and garlic and fry the chicken until lightly browned on all sides.
2. Mix the cornflour to a smooth paste with a little of the stock. Then combine with the remaining stock and cook over a low heat, stirring constantly until thickened.
3. Pour over the chicken, cover the casserole or saucepan and simmer for 30 minutes. Stir in the yogurt and continue cooking gently for 30 minutes.
4. Adjust the seasoning to taste before serving. Sprinkle lightly with chopped chives or parsley.
