method
1. Skin tomatoes by immersing them in a pan of boiling water.
2. Chop tomatoes, cut ham into strips and shred basil.
3. Cook pasta in a large pan of lightly salted boiling water for 10 - 12 mins until just tender.
4. Heat the oil in a saucepan, add tomatoes and tomato puree and saute for 4 - 5 mins. Add seasoning.
5. Drain pasta, toss in butter and seasoning. Stir in ham and basil.
6. Serve pasta topped with tomato sauce and garnished with basil sprig.
Fresh basil develops a bitter taste if overcooked so always add to a dish just before serving.
