1. Heat the oven to 200°C (400°F) Gas 6.
2. Heat the oil in a small saucepan, add the onion and fry gently until it is soft.
3. Add the mushrooms and fry for 1 - 2 minutes only, stirring constantly. Remove the saucepan from the heat and cool.
4. Sieve the cottage cheese into a bowl and beat in the beaten eggs, a little at a time.
5. Add the diced ham to the cheese mixture with the onion and mushrooms. Add the nutmeg, then season to taste with salt and pepper.
6. Brush 4 ramekins or cocottes with the melted butter and divide the mixture between them.
7. Place on a baking sheet and bake for about 20 - 25 minutes or until well risen, and brown and bubbly on top. Serve immediately, garnished with sprigs of parsley.
