This is a good accompaniment to strongly flavored meats, turkey, or even goose. Always cook the cabbage in a stainless-steel or enamel pot; aluminum will react with the acid in the vinegar and the sour salt.
ingredients
1 red cabbage, shredded
3/4 cup water
1/2 teaspoon salt
2 large apples, peeled, cored, and diced
1/2 cup golden raisins
1/2 cup wine vinegar
2 tablespoons brown sugar
dash of sour salt (citric acid)
method
Put the cabbage, water, and salt in a large pot. Bring to a boil over high heat, then cover the pot and cook the cabbage for 15 minutes.
Add the remaining ingredients and cook until the cabbage is tender, about 20 minutes.
