These are as much fun to make as they are delicious to eat. They grow magically before your eyes.
1 egg white
450 g (1 lb) icing sugar (all the sugar may not be needed)
Food colourings such as red, green or yellow
Chopped toasted nuts or sifted cocoa powder
Flavouring essences
Icing sugar
Whipped cream
method
1. Beat the egg white lightly and sift in the icing sugar until the mixture forms a pliable paste that can be rolled out like pastry Add the chosen colouring and flavouring with the icing sugar. The mixture may also be divided and several different colourings and flavouring used.
2. Roll the dough to a thin sausage shape about 1.25 cm (1/2 inch) thick. Cut into small pieces and place well apart on greaseproof paper on a plate or microwave baking sheet. Flatten the pieces slightly
3. Cook for 1 minute on HIGH or until dry. The meringues will triple in size. Leave to cool on a wire rack.
4. When the meringues are cool, sandwich them together with whipped cream and sprinkle lightly with icing sugar.
