Diced Chicken and Peppers

ingredients

serves 4
2 tbsps oil
1 clove garlic, crushed
450 g (1 lb) chicken meat, skinned, boned and diced
1 small red chilli pepper, seeded and diced
1 tsp cornflour
2 tbsps white wine
2 tbsps soy sauce
4 tbsps chicken stock
2 green peppers, diced
Pinch sugar (optional)
Salt
1/2 small can bamboo shoots, diced

method

1. Heat the oil for 30 seconds on HIGH in a large casserole dish.

2. Add the garlic and cook for 30 seconds on HIGH. Add the chicken and stir to coat with oil.

3. Add the chilli pepper, cornflour, wine, soy sauce and stock. Stir well and cover the dish.

4. Cook for 7-9 minutes on HIGH, stirring halfway through the cooking time. Add the green pepper, sugar, if using, and salt if needed.

5. Cook for 30 seconds on HIGH, add bamboo shoots and leave to stand, covered, for 2 minutes before serving.
