Prawns and Ginger

Quick and easy to prepare, this dish is really delicious and also very nutritious.

ingredients

serves 6
2 tbsps oil
675 g (1 1/2 lbs) peeled prawns
1 inch piece fresh root ginger, peeled and finely chopped
2 cloves of garlic, peeled and finely chopped
2-3 spring onions, chopped
1 leek, white part only, cut into strips
120 g (4 oz) peas, shelled
180 g (6 oz) bean sprouts
2 tbsps dark soy sauce
1 tsp sugar
Pinch salt

method

1. Heat the oil in a wok and stir-fry the prawns for 2-3 minutes. Set the prawns aside.

2. Reheat the oil and add the ginger and garlic. Stir quickly, then add the onions, leek and peas. Stir-fry for 2-3 minutes.

3. Add the bean sprouts and prawns to the cooked vegetables. Stir in the soy sauce, sugar and salt and cook for 2 minutes. Serve immediately.
