Oven temperature 160 C, 325 F. gas 3,

ingredients

serves 4
350 g (12 oz) haricot beans
2 onions, chopped
100 g (4 oz) rindless streaky bacon, chopped
100 g (4 oz) cerveiat sausage, sliced
4 chicken drumsticks
225 g (8 oz) tomatoes, peeled and quartered
3 tablespoons tomato puree
900 ml (1 1/2 pints) chicken stock
bouquet garni
salt and pepper
1 teaspoon chopped parsley to garnish

method

1. Soak the haricot beans in cold water overnight, then dram well. Mix the beans, onion, bacon, sausage, chicken and tomatoes in a casserole.

2. Add the tomato puree, chicken stock, bouquet garni, season well and mix together.

3. Cover the casserole with a lid and cook in a moderate oven for about 2 1/2 hours until the haricot beans are cooked.

4. Serve immediately, garnished with chopped parsley.
