1 cucumber
4 large tomatoes, peeled and deseeded
12 oz (350 g) natural yogurt
1/2 tsp ground cumin
a pinch of cayenne pepper
2 tbsps lemon juice
method
1. Peel and grate the cucumber. Place in a colander and sprinkle with salt.
2. Stand for 30 minutes, then rinse well and squeeze firmly. Finely chop the tomatoes. Mix the yogurt with the ground cumin, cayenne pepper, lemon juice and seasoning.
