1. Chop the celery. Wash, quarter and core the apples but do not peel them; cut the quarters into fairly small pieces.
2. Pour the apple juice into the blender, add the celery and apples and process at high speed until smooth.
Unless you have a large capacity blender or liquidizer, you will need to process the ingredients in 2 batches.
3. If the juice is too tart for your taste, add a generous pinch of sugar. Alternatively, add a small pinch of celery salt and a dash of Tabasco.
4. Serve with ice cubes.
