Stir-Fried Mushrooms, Bamboo Shoots and Sweetcorn

ingredients

serves 10
1 kg soaked and sliced dried Chinese mushrooms
50 ml groundnut oil
200 g bamboo shoots
100 g baby sweetcorns
150 ml stock
25 ml sesame oil
soy sauce
seasoning
boiled rice

method

Stir-fry 1 kg soaked and sliced dried Chinese mushrooms in 50 ml groundnut oil, add 200 g bamboo shoots and 100 g baby sweetcorns, moisten with the soaking liquid of the mushrooms, 150 ml stock, 25 ml sesame oil, flavour with soy sauce and seasoning and simmer for 5 minutes.

serve on a base of boiled rice.
