Caviar is the salted roe of various kinds of sturgeon. It is generally served in the container in which it was purchased, set in crushed ice or in a special dish called a timbale. It is served accompanied with quarters of lemon, blinis or thinly sliced black bread and butter, soured cream, sieved white and yolk of hard-boiled egg and chopped onion.
