4 whiting, cleaned and trimmed
1/2 stick (2 oz) 50 g butter
salt and pepper
1/2 cup (75 g) dry white breadcrumbs

method
1. Use a little of the butter to grease an ovenproof baking dish. Melt the remaining butter in a small saucepan. Set the oven at 190°C/375°F/gas 5.
2. Brush the whiting all over with melted butter, season with salt and pepper and sprinkle liberally with breadcrumbs. Place in the prepared dish and bake for 20 minutes. Garnish with lemon twists and serve.
