Superior Prunes

ingredients

makes approx. 1 kg (2 lb)
450 g (1 lb) Demerara sugar
100 ml (4 fl oz) cold coffee
450 g (1 lb) prunes, stoned
450 ml (3/4 pt) Kahlua or Creme de Cacao
100 ml (4 fl oz) vodka

method

1. Put the sugar and coffee into a medium heavy-based pan. Bring to the boil, stirring all the time. Reduce the heat and simmer for 5 minutes.

2. Add the prunes and simmer gently for a further 40 minutes. Remove the prunes with a slotted spoon and put into sterilized jars.

3. Mix together the Kahlua or Creme de Cacao and vodka and half fill the jars.

4. Cover with the syrup and seal the jars.
