method
1. Trim off any excess fat from the chicken.
2. Wash the coriander, including the roots and stalks then puree these, reserving a few leaves for garnish.
3. Add the fish sauce, sugar, black pepper, garlic and salt.
4. Put the chicken into a large bowl and add the blended coriander mixture.
5. Toss well to coat, cover and leave for two hours or more to marinate in the refrigerator..
6. Cook the chicken under a preheated grill/broiler or over a hot barbecue.
7. Slice it when cooked with a sharp knife and serve garnished with the reserved coriander leaves.
