ingredients
3 cups (350 g) 3/4 lb wholemeal flour
1 tsp (5 ml) salt
2 level tsp (10 ml) baking powder
3/8 cup (75 g) Barbados (brown) or molasses sugar
45 ml (3 tbls) molasses
175 ml (6 fl oz) 3/4 cup water
60 ml (4 tbls) natural yogurt
grated rind 1 orange
125 g (1/4 lb) 1 cup chopped walnuts
butter for greasing 2 lb (900 g) loaf tin (5-cup bread pan)
method
1. Heat the oven to gas mark 1 / 140°C (275°F).
2. Put the flour, salt and baking powder into a bowl and toss them together with your fingers. Make a well in the centre.
3. Warm the sugar, molasses and water gently in a saucepan until the molasses and sugar have melted. Pour them into the flour.
4. Add the yogurt and orange rind and gradually stir in the flour from the sides of the bowl.
5. Mix in the walnuts and make sure they are evenly distributed.
6. Transfer the mixture to a greased 2 lb (900 g) loaf tin (5-cup bread pan) and smooth the top.
7. Bake the loaf for 1 3/4 hours, or until a skewer inserted into the centre will come out clean.
8. Cool the loaf in the tin (pan) for 5 minutes and then turn it onto a wire rack to cool completely.
