method
1. Place 45 ml (3 tbsp) water in a large heatproof bowl.
2. Sprinkle the gelatine on to the surface of the liquid.
3. Stand the bowl over a saucepan of hot water and stir the gelatine until it has dissolved completely.
4. Add 375 ml (13 fl oz) boiling water and 100 g (4 oz) sugar and stir until the sugar has dissolved.
5. Add the lemon juice. Chill the mixture.
6. When the mixture is beginning to set, remove it from the refrigerator and whisk until frothy.
7. In a clean, grease free bowl, whisk the egg whites until just stiff; fold them into the jelly.
8. Slice the bananas and arrange them on the base of a glass serving dish.
9. Pile the whipped jelly mixture on top and chill until firm.
