method
1. Place half the cookies bottom side up on a baking sheet, spread with ice cream.
2. Place the remaining cookies on top of the ice cream and place in the freezer for 30 minutes.
3. Half dip the cookies into the chocolate, place onto a serving plate and serve immediately.
