Classic Greek dip keeps well for 3-4 days if stored in the refrigerator in an airtight container.

ingredients

serves 4
175 g (6 oz) smoked cod's roe, skinned
2 oz (50 g) fresh wholemeal breadcrumbs
1 garlic clove, skinned and crushed
2/3 cup (150 ml) 1/4 pt low-fat natural yogurt
juice of 1/2 lemon or 1 lime
pepper, to taste
1 tbsp (15 ml) snipped fresh chives
fresh chives and lemon and lime twists, to garnish
toasted wholemeal bread fingers, to serve

method

1. Blend all the ingredients, except for the garnish and toast, in a blender or food processor until smooth and creamy, then adjust the seasoning.

2. Garnish and serve with wholemeal toast fingers.
