You can make up a good pickling vinegar with any or all of the following spices.
1 seeded, dried chilli
1 tbsp black peppercorns
1 tbsp allspice berries
1 thick slice of fresh ginger root
1 bay leaf
1 blade of mace
1/2 oz (15 g) mustard seeds
cloves to taste
garlic to taste
4 cups (1 litre) 1 3/4 pint malt, red or white wine vinegar
1. Bruise the spices and tie them in a muslin bag.
2. Boil them in the vinegar for ten minutes.
3. Allow the vinegar to cool completely, with the bag still in it, before you use it for pickling,
