Jugged Peas

ingredients

serves 8
2 kg (4 1/2 lb) peas, shelled
2 tbsp (25 g) 1 oz butter
1/2 level tsp (2.5 ml) salt
1 tsp (5 ml) caster sugar (superfine granulated)
12 mint leaves
freshly ground pepper

method

1. Put all the ingredients in a screw-top jar. Screw the lid on tightly and stand in a saucepan of boiling water coming half way up the jar.

2. Boil for 30 minutes. Take out the mint leaves before serving. If the peas are old, they may take a little longer, but cooked this way peas are delicious and tender.
