Harvest Mackerel

ingredients

serves 4
1 mackerel
1 apple, peeled, cored and grated
25 g (1 oz) fresh breadcrumbs
2 oz (50 g) English Cheddar cheese, grated
75 ml (2 1/2 fl oz) fresh single cream
3 oz (75 g) natural yogurt
salt and freshly ground pepper
lemon wedges and chopped fresh parsley to garnish

method

1. Wash and dry the mackerel thoroughly. Place in a shallow ovenproof dish.

2. Place the apple, breadcrumbs, cheese, fresh cream and yogurt in a bowl and mix well. Season to taste. Spoon the mixture over the mackerel and cover the dish with foil.

3. Bake in the oven at 180°C (350f) mark 4 for about 25 minutes, until the fish is cooked through.

Serve hot garnished with lemon wedges and sprinkled with parsley.
