1. Put the sugar and milk in a heavy-based saucepan and stir well.
2. Bring to the boil and continue to boil, stirring occasionally, until a drop of the mixture placed in cold water forms a small ball hard enough to retain its shape.
3. Remove from the heat, add the peppermint essence and stir until the mixture becomes thick.
4. Add the green food colouring.
5. Dampen the inside of a shallow square tin and pour in the mixture.
6. Leave to cool, then cut into pieces
