method
1. Preheat the oven to 400°F (200°C) Gas Mk 6.
2. Pour 1 pt (600 ml) of water into a large saucepan and bring to the boil.
3. Add the Brussels sprouts together with the nutmeg and salt to taste.
4. Bring back to the boil, lower the heat, cover and cook gently for 10-15 minutes.
5. Drain well and arrange in an ovenproof dish.
6. Melt half the butter in a frying pan, add the onion and cook for 4-5 minutes.
7. Stir in the ham.
8. Sprinkle over the Brussels sprouts, then sprinkle with the Parmesan cheese.
9. Dot over the remaining butter and cook in the oven for 20 minutes until the top is golden brown.
