1 1/2 lb (700 g) beef, minced
1/2 stick (2 oz) 50 g butter
2 large onions, chopped
1 large tomato, peeled and sliced
salt and pepper to taste
1 1/4 cups (10 fl oz) 300 ml beef stock
4 medium potatoes, peeled and cubed
6 plums, peeled and stoned (seeded)
2 peaches, peeled, stoned (seeded) and sliced
2 pears, peeled, cored and sliced
1/3 cup (70 g) seedless raisins
method
1. Melt the butter in a heavy casserole and fry the onions until brown.
2. Add the sliced tomato and stir into the onions.
3. Add the minced beef and brown for a few minutes.
4. Add seasoning and stock.
5. Cover the casserole and cook very gently, either in the oven or on top of the cooker for 1 hour.
6. Add the potatoes and fresh fruit and cook until the potatoes are just tender.
