1. Wipe the chops or cutlets and trim off any excess fat.
2. Beat the egg until liquid and mix with the sage, salt and pepper.
3. Brush the chops or cutlets on both sides with the beaten egg, then coat them carefully with the breadcrumbs.
4. Heat the oil, butter or lard in a frying pan, and fry the chops or cutlets gently for about 20 minutes, turning often, until golden brown and cooked through.
