2 lb (900 g) cooked potatoes, mashed
2 tsp salt
Good grinding of black pepper
175 g (6 oz) pork chitterlings, cooked
2 oz (50 g) onion, grated
110 g (4 oz) cheese, grated
method
1. Season the mashed potato with the salt and pepper.
2. Using a potato scoop, form the potato into a ball.
3. Make all the potato balls at one time and leave for the time being.
4. Cut the cooked chitterlings into small pieces and mix with the grated onion.
5. Press a heaped teaspoonful into the centre of each potato ball and reshape.
6. Roll each ball in the grated cheese and bake in the oven Gas mark 7, 425°F (220°C) until the cheese is golden and crunchy.
