Smoked Ham and Pineapple Topping

ingredients

serves 4
2 large baked potatoes
8 oz (225 g) smoked ham
110 g (4 oz) cheese
2 slices pineapple, chopped
3 tbsp mayonnaise
4 slices pineapple, grilled and halved
Watercress (salad cress) for garnish

method

1. Halve the baked potatoes and score the tops with a fork.

2. Dice the ham. Grate the cheese and mix the ham, cheese and chopped pineapple with the mayonnaise.

3. Pile the mixture on top of the baked potato halves.

4. Garnish with the grilled pineapple and the watercress.
