Herbed Potatoes

ingredients

serves 2
8 oz (225 g) potatoes, hot and mashed
1 tsp thyme, finely chopped
1 tsp mint, finely chopped
1 tsp parsley, finely chopped
1 tsp marjoram, finely chopped
1 tsp basil, finely chopped
3 oz (75 g) Parmesan cheese, grated
1 tbsp fresh breadcrumbs
2 tbsp (1 oz) 25 g butter

method

1. Put the hot, mashed potato through a mouli and mix together with the finely chopped herbs.

2. Stir in the Parmesan, or any other strong cheese.

3. Place in a suitable dish, sprinkle the breadcrumbs over the mixture and dot with butter.

4. Brown under a hot grill.
