1. Remove the rind and excess fat from the pork chops and keep on one side.
2. Put the seasoned flour in a plastic bag, drop in each chop one at a time and shake gently to lightly coat each surface with seasoned flour.
3. Heat the oven to 350°F (180°C) mark 4.
4. Place the pieces of excess fat in a large frying pan and heat gently until the bottom of the pan is lightly coated with fat.
5. Lift out these pieces of fat and discard. Add the chops to the pan and brown on both sides.
6. Lift them out onto a plate. Add the onions to the pan and fry gently in the remaining fat for 5 minutes. Add the apples and cook for 3-4 minutes, stirring constantly. Add the salt and plenty of freshly ground pepper.
7. Place half of the onion and apple mixture in a shallow 2 pt (1 l) heatproof dish. Arrange the chops on top, cover with the rest of the onion and apple mixture and pour over the cider.
8. Cook uncovered in the oven for about 1 hour. (If the dish has been prepared in advance and put in the refrigerator, cook in the oven for about 1 1/4 hours.) Sprinkle with chopped parsley, if used, before serving.
