Sultana Tea Cakes recipe

ingredients

3 cups (450 g) 1 lb flour warmed and sifted with 1 tsp salt
3 tbsp (25 g) yeast creamed with 1 tsp sugar
1 egg
1 cup (8 fl oz) 250 ml milk
2 tbsp (1 oz) 25 g butter
3/4 cup (110 g) sultanas (golden raisins)
1/4 cup (4 tbsp) 50 g sugar

method

1. Put flour and salt into a warmed basin.

2. Cream the yeast, beat the egg and then whisk together.

3. Heat the milk, add sugar, allow butter to melt in milk, and cool to blood heat.

4. Mix this with the yeast and egg.

5. Pour into a well made in the flour; mix. Put to rise, covered.

6. When risen knead lightly, adding sultanas.

7. Shape, prove, and bake.
