Slimmer's Platter

ingredients

serves 1
4 stuffed green olives, rinsed and roughly chopped
113.3 g (4 oz) carton cottage cheese
5 ml (1 tsp) horseradish relish
salt and freshly ground pepper
1 wedge of lettuce heart
1 peach, skinned and quartered
6 grapes, skinned and halved

method

1. Combine the olives with the cottage cheese and the horseradish. Season well.

2. Arrange the lettuce on a plate with the cottage cheese mixture alongside, surrounded by the peach. Scatter the grape halves on top.
