ingredients
2 dessert apples
lemon juice
2 celery sticks, chopped
50 g (2 oz) Edam cheese, diced
100 g (4 oz) grapes, halved and seeded
1/2 lettuce, shredded
grated rind and juice of 1 orange
2 tablespoons natural low-fat yogurt
method
1. Chop the apples and put in a bowl and sprinkle with lemon juice. Add the celery, cheese and grapes and mix together. Arrange a little shredded lettuce in the base of four dishes. Pile the cheese and fruit mixture on top.
2. Mix the orange rind, juice and yogurt together, then pour a little over each cocktail. Serve chilled.
Always wash fresh fruit thoroughly in cold water. This is particularly necessary when using unpeeled fruit such as apples and grapes. A crisp variety of dessert apple will give a pleasant contrasting texture to the cheese.
