1. Remove the outer leaves from the radicchio and cut away the thick stems. Separate the leaves, tearing the larger leaves into pieces. Put in a sieve, rinse and drain thoroughly. Arrange in a salad bowl.
2. To make the dressing, beat the garlic with the basil, salt and pepper to taste, cheese, oil and vinegar. Pour over the radicchio and toss lightly. Leave to stand for a few minutes before serving to allow the flavours to develop.
This is a delicious simple salad which can be served as a starter or as an accompaniment. In Italy it is often eaten with plainly cooked veal escalopes.
