Halibut with tarragon

Preparation time: 10 minutes, plus marinating,
Cooking time: 15-20 minutes,
Oven temperature: 200 °C, 400 °F, gas 6

ingredients

serves 4
4 halibut steaks, about 175 g (6 oz) each
grated rind and juice of 2 - 3 lemons
few tarragon sprigs
salt and pepper

method

1. Place the halibut in a large shallow dish. Sprinkle over the lemon rind and juice, tarragon, salt and pepper. Turn the fish to coat with the mixture. Cover and leave to marinate for about 3 hours.

2. Place each piece of fish on a sheet of foil large enough to enclose it. Spoon over a little of the marinade and wrap up the fish.

3. Cook in the oven for about 15-20 minutes, depending on the thickness of the halibut. Unwrap and serve on a warmed dish.

Rinse the halibut steaks in cold water to remove any blood, rubbing with a little salt if necessary. Cod steaks can also be cooked in the same way.
