1. Heat the oil in a wok or large frying pan, add the black beans, garlic, ginger and spring onions and stir-fry briskly for 30 seconds.
2. Add the pork and brown quickly for 1 minute. Add the crab, sherry and stock and boil rapidly for 8-10 minutes. Combine the eggs and sesame oil and stir into the wok.
3. Stir for 30 seconds, until the egg has cooked into strands. Transfer to a warmed serving dish, garnish with spring onion flowers and serve immediately.
To make spring onion flowers, trim the green top and remove the white part. Shred the top, leaving 2.5 cm (1 inch) attached at the base. Immerse in iced water.
