1. Blanch, peel, halve and stone the peaches. Bring the wine to the boil with the water, lemon juice, lemon rind, ginger, sugar and cinnamon. Add and poach the peach halves for 10 minutes, then remove from the saucepan and leave them to cool.
2. Thicken the juice with the cornflour, dissolved in a little cold water, pour it over the peaches and leave to cool. Sprinkle the peach halves with chocolate shavings before serving.
