Aduki bean soup

Preparation time: 15 minutes, plus soaking,
Cooking time: 1 1/4 hours,
Calories: 174 per portion.
Aduki (or adzuki) beans have a sweet but fairly strong flavour. These tiny, dark red beans are rich in protein. If unobtainable, substitute kidney beans.

ingredients

serves 4
100 g (4 oz) aduki beans
2 tablespoons oil
1 onion, chopped
1 celery stick, chopped
1 carrot, chopped
1 garlic clove, crushed
2 tomatoes, peeled and chopped
1 tablespoon tomato puree
1 bay leaf
1 teaspoon chopped thyme
900 ml (1 1/2 pints) stock or water
salt and pepper
chopped parsley

method

1. Soak the beans in cold water to cover for 3 hours; drain well.

2. Heat the oil in a large saucepan, add the onion, celery and carrot and cook until softened. Add the remaining ingredients, with salt and pepper to taste.

3. Bring to the boil, boil for 10 minutes, then simmer for 1 hour.

4. Pour into a warmed soup tureen and sprinkle with the parsley to serve.

Tried it and it turns out to be an excellent warming soup. I was afraid the sweet taste of the Adzuki beans would be too strong, but it came out very good, no sweet at all - nice, warming, earthy bean soup...

This is a very simple, easy to follow recipe and the end result was pleasantly tasty.Especially for something so healthy.

Thanks for this recipe this really tasted good almost as thick as a stew great with rice.
