Baked honey ribs recipe

Most butchers will supply sheets of Chinese-style spare ribs, but some need a few days notice. Ordinary spare rib chops will not make a satisfactory substitute.
Marinate the ribs in the sauce ingredients for a few hours, before barbecuing them, basting with the sauce.
Eat the ribs with your fingers (making sure you have plenty of napkins to hand). Excellent accompaniments for these honey ribs are hot Greek pitta bread and fresh green salad.

1. Heat the oven to 200°C (400°F) Gas 6.
2. If necessary, cut through the ribs to separate them. Put them in a single layer in 1 large or 2 small roasting tins.
3. Combine the remaining ingredients in a small saucepan and season well with salt and pepper. Heat gently, over low heat until just simmering.
4. Brush the ribs with the sauce on both sides, using a pastry or similar kitchen brush, then pour over any remaining syrup, making sure the ribs are well coated.
5. Bake in the oven uncovered, for 1 hour, basting and turning the ribs frequently, then turn the oven down to lowest for 30 minutes more, or until the flesh is well cooked and the ribs thoroughly coated in syrupy sauce. Serve at once.
