1. In a bowl, combine the semolina, salt, cinnamon, beaten eggs, and water. Knead to form a firm dough, then roll out dough as thinly as possible—about 1/16 inch—on a floured board. Use a ravioli cutter or sharp knife to slice the dough into 1-inch squares.
2. Grind the nuts and confectioners sugar together in a food processor or blender until a fine powder. Pile a teaspoonful of the mixture into the center of each semolina square. Fold each corner of the semolina square toward the center. Dip your fingers in rosewater to moisten and seal the edges of the dough.
3. Heat the oil in a deep skillet and fry a few of the semolina candies at a time until golden. Drain thoroughly on absorbent paper.
4. Warm the honey until it is a liquid. Arrange the candies on a serving dish and pour honey over them. Sprinkle with more rosewater.
