Spiced Tea

ingredients

serves 6
1 litre (1 3/4 pints) water
430 ml (3/4 pint) milk
1.25 cm (1/2 inch) piece cinnamon stick
4 cloves
Seeds of 4 small cardamoms, crushed
6 tea bags, or 2 tbsps tea leaves
Sugar to taste

method

1. Put the water, milk, cinnamon, cloves and cardamom seeds into a saucepan, bring to the boil and simmer for 1 minute.

2. Add the tea bags or tea leaves. Remove the pan from the heat and cover. Allow to stand for 2 minutes.

3. Stir well and add sugar to taste.

4. Strain into cups through a muslin-lined sieve and serve hot, or strain into a jug and refrigerate until cold. Serve in tall glasses.
