Orange Baked Fish

ingredients

serves 4
4 herrings
4 bay leaves
60 g (2 oz) butter
Juice and grated zest of 1/2 orange
1 tbsp chopped dill
Orange slices

method

1. Rinse the fish and dry well. Place a bay leaf inside each fish. Place each fish on a sheet of non-stick baking parchment.

2. Put the butter in a small bowl and cook on HIGH for 30 seconds to 1 minute to soften slightly

3. Beat in the orange juice, zest and dill. Divide the butter into four and spread some over each of the fish.

4. Wrap each parcel separately, making sure the fish is totally enclosed.

5. Cook on HIGH for 6 - 8 minutes, until the fish is cooked, turning the fish parcels halfway through the cooking time. Serve in the paper garnished with orange slices.

Surely herring does not need butter added to it?
