Lemon Chicken (Microwave)

Can't find red pepper flakes, use Crushed Chillies, same thing.

ingredients

serves 4
4 chicken breasts, skinned, boned and cut into thin strips

for the marinade

4 tbsps soy sauce
2 tsps dry sherry or shaohsing wine
Salt and pepper

for the sauce

3 tbsps salted black beans
2 tbsps water
6 tbsps lemon juice
250 ml (8 fl oz) chicken stock
4 tbsps sugar
1 tsp sesame oil
3 tbsps cornflour
2 cloves garlic, finely chopped
1/4 tsp red pepper flakes
Lemon slices to garnish

method

1. Mix chicken with the marinade ingredients, cover and refrigerate for 30 minutes.

2. Crush the black beans, combine with the water and leave to stand until ready to use.

3. Combine remaining sauce ingredients in a shallow dish. Add the chicken, marinade and black beans, cover and cook on HIGH for 7 - 9 minutes, stirring halfway through the cooking time.

4. Once the cornflour has cleared, leave the chicken to stand, covered, for 2 minutes before serving. Garnish with lemon slices.
