Salade Frisee

ingredients

serves 6
1/2 curly endive, trimmed
4 oz (125 g) streaky bacon
4 thick slices white bread, crusts removed
1 1/2 tbsp olive oil
1 tbsp (15 ml) wine vinegar

method

1. Put the endive in a bowl. Remove rinds from bacon, reserve. Chop bacon and fry with the rinds in a frying pan for 5 minutes. Discard the bacon rinds.

2. Cut bread into cubes. Add bread and olive oil to the pan. Fry bread for 2 minutes until crisp. Remove with a slotted spoon. Add the vinegar to the pan and boil rapidly.

3. Spoon the bacon and croutons over the endive. Pour over the pan juices and toss well.
