75 g (3 oz) butter
150 g (5 oz) wholemeal flour
200 ml (7 fl oz) fresh milk
100 g (4 oz) onions, diced
1 red pepper, diced
100 g (4 oz) Sage Derby cheese, grated
2 eggs, beaten
salt and freshly ground pepper
method
1. Rub 65 g (2 1/2 oz) butter into flour until the mixture resembles fine breadcrumbs. Mix to a dough with 3 - 4 tablespoons of milk. Roll out on a floured work surface and use to line a 20.5 cm (8 inch) flan tin.
2. Melt remaining butter in a pan, add onions and red pepper. Cook until just softened. Place in the base of the pastry case.
3. Mix together the cheese, eggs and milk. Pour over the onions. Bake at 200°C (400°F) mark 6 for 30 minutes until well risen and golden.
